Grain free granola recipe

This was a great way to start the morning. I’m a sucker for a good granola but many of the store bought kinds contain oats, something that doesn’t agree with my body. 

So I created a brand new granola recipe over the weekend and thought I’d share it with you so you can enjoy it also.

This recipe is free from gluten, dairy, refined sugars and is also vegan and paleo friendly.

LETS GET STARTED THEN-

Set your oven to 180oC (fan forced).

What you’ll need:

1 cup of dessicated coconut

1/2 cup of loving earth caramelised buckinis

1 cup of pecans

1 cup of macadamias

1 cup of dried cranberries 

1/2 cup of coconut oil 

1/2 cup of maple syrup

In a large bowl combine the dry ingredients first then mix through the oil and maple syrup. 

Place on a lined baking tray and place in the oven for 7 minutes then remove and mix with a spoon if it isn’t yet a little golden brown place back in the oven for a few minutes but don’t go too far, due to the high fat content in the nuts they will burn quickly so keep an eye on them.

Allow to completely cool on the tray. Once cooled place into a air tight jar. Will last for a week or two of it lasts that long out of your belly. 

SERVING SUGGESTIONS 

I had mine with vanilla cashew cream, raspberry chia seed jam and frozen raspberries but you can also have it with;

Plant based milk or coconut yoghurt topped with a selection of you favourite fruit.
